How to Enjoy your Holleman Farms Pasture-Raised Chicken

 

  Our chicken is different than commercially raised poultry.  With its lower fat content and lack of

added fluids or chemical additives, it requires less cooking time at a lower temperature.  

 

Here are a few of our favorite ways to prepare it: 

Fried

If you ever feel the need to indulge in fried chicken, you just have to try the Lemon Brined Fried Chicken recipe from Thomas Keller.  

It is worth the mess you will make in your kitchen!

 

And if you’re not up to frying, the lemon brine recipe is amazing, no matter how you want to cook the chicken. 

Rock Salt Roast

Chicken stuffed with lemon, parsley, and garlic, then roasted on a bed of rock salt...YUM!

Crock Pot

To prepare chicken for casseroles, tacos, enchiladas, or chicken salad, nothing beats the Crock Pot!  

 

Just slice a medium-sized onion into rings and line the bottom of the Crock Pot. Then rub your chicken inside and out with your favorite seasoning, and place in the crock pot, breast side down. Cook on low for several hours. 

Broth

Don’t forget that after you enjoy your chicken, you can use the bones to make a nutritious broth to use as a base for soup or a liquid to cook rice in. 

Cook your broth on low heat for 24 hours for the best nutritional value.
